Tempeh Sloppy Joes

Sloppy joes, slop sloppy joes. Take a trip to lunch lady land with these tempeh sandwiches that take all of about 10 minutes to make. (I adapted this recipe.)

NOT made out of yesterdays meatloaf.

Tempeh Sloppy Joes
Time commitment: 10 minutes. Seriously.
Makes enough for about 4 large sandwiches

Ingredients:
1/2 c. barbeque sauce (I use Trader Joe’s Kansas City style)
3/4 c. water
1 package of tempeh (I looooove Trader Joe’s 3 Grain tempeh with brown rice and quinoa)
1 T. olive oil
1 red bell pepper, diced
1 green bell pepper, diced
hamburger buns

Directions:
Wash and dice peppers. Mix bbq sauce and water in a bowl. Crumble tempeh into sauce mixture and set aside. Heat up a skillet over medium heat. Add oil to pan, swirl around to coat, add peppers, cook for about 5 minutes, stirring occasionally. Add tempeh and sauce to pan. Preheat broiler. Bring tempeh mixture to a simmer and stir occasionally for a minute or two. Meanwhile, toast hamburger buns open face under the broiler.

Suggested side dishes:

  • salad
  • chips
  • fries
  • broiled broccoli (that’s what we had)
  • potato salad
  • coleslaw
  • ears of corn
  • whatever you have lying around?
  • or just eat two sandwiches

  1. I had the pleasure of sharing this meal with Sara and it was delicious and filling! I think I've added at least a year to my life just by eating this extremely healthy meal. 😉
