Apricot, Peach and Plum Breakfast Smoothie

I’m not a huge smoothie/juice person but I do enjoy them from time to time, especially when I can feel good about not wasting fruit that’s starting to look forlorn. Yesterday morning I mixed one up with some peach soy yogurt, two small apricots, a plum, and two ice cubes. I have a stick blender that my mother in law gave me and not only is it completely easy to store, but it’s one of the most useful and versatile things I have in my kitchen. Thanks, Linda!
I was going to add some spinach but the smoothie turned out to be such a pretty color I just couldn’t bear to mess it up.
At the last minute, as I put the spinach back in the fridge, I grabbed the chia seeds and threw in a tablespoon. Check out what you get out of a tablespoon of chia seeds:

According to Spectrum Organics, chia seeds also have a higher antioxidant level than blueberries! Woot.

I didn’t use banana only because I didn’t have any. Chia seeds gel up like flax seeds though so the texture was fine.

A confession that I ought to make is that I cheated on Tuesday. It’s true. But, it’s not totally my fault: a friend and I were supposed to go to the beach but the weather didn’t hold so we got coffee and went to Flying Apron, a vegan and gluten free cafe. She’s GF and I like to try to be vegan most of the time, so it was a fun little adventure. But, other than that, I haven’t bought a thing for the kitchen (except for some wine, but that doesn’t really count, right?). I love this challenge!
